A private cooking class is the calmer, more personal cousin of the shared group class. You have the riad kitchen and the host to yourselves, so the pace bends to you: linger on the spice blending, cook two tagines instead of one, or simplify for children. Most riads used are traditional houses down the derbs behind the souks, a short walk from Jemaa el-Fnaa, with a tiled courtyard, a marble or zellige counter and a rooftop where you finally sit down to eat.

The core menu is the food Marrakech families actually cook: a chicken tagine with preserved lemon and green olives slow-braised in a conical clay pot, two or three Moroccan salads such as smoky zaalouk (aubergine) and taktouka (pepper and tomato), and a round of khobz bread. Because it is private, many hosts add a second main on request — a lamb tagine with prunes and almonds, or couscous rolled by hand and steamed three times in a couscoussier the way it is done for a Friday family lunch.

The real teaching is in the spice work and the technique.
